Cooking Baobab Sadza and Super Porridge

Preparation time for Baobab sadza
Prep Time; 5 min.

Cook time; 15 min.

Total time; 20 min.

Ingredients: 2 cups mealie-meal, one cup baobab powder, 1 litre water.

Instructions: In a pot mix 2 cups of the mealie-meal with 2 cups of water to make a paste. Add 500 ml of boiling water and place on the stove and bring the mixture to a boil continuously mixing it.

Once the mealie-meal is boiling rapidly cover and allow to simmer on lower heat for 15 minutes. Reduce the heat to the lowest setting and add the baobab powder one tablespoon at a time as you are folding the mixture until the right thickness is achieved.

Close the pot and allow to steam a further 5 minutes on low heat. Fold mixture again before serving.

Super porridge
Preparation time: 15 min; Cooking time 10 min.

Ingredients; 400g Rapoko Mealie-Meal, 1litre water, Peanut Butter, Lacto, Baobab Powder, Honey.

Instructions: In a pot mix 400g of the mealie-meal, baobab powder with a cup of water to make a paste. Add 500 ml of boiling water and place on the stove and bring the mixture to a boil continuously mixing it.

Once the mealie-meal is boiling rapidly cover and allow to simmer on lower heat for 15 minutes. To serve place porridge in bowl. Add baobab powder, peanut butter, lacto and honey to taste. (source: Chikafu recipes by Carl Joshua Ncube)
