PIRI piri chicken is one of my favourite Southern African recipes which is traditionally made from piri piri peppers. It is also called peri peri chicken in South Africa. I used fresh chillies peppers for my recipe for lack of piri piri peppers where I lived. The chicken is first marinated in a hot marinade sauce for two hours and grilled in a barbecue or grill.Ingredients:
4 chicken legs
1 tablespoon of roasted chilli powder
2 fresh chillies
3 cloves garlic
juice of 1 lime
1 teaspoon of grated ginger
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon paprika
2 tablespoon of oil
1 bouillon cube, optional

Instructions
Step 1: In a food processor, blend all the spices together. Add the roasted chilli powder, the grated ginger, black pepper, salt, the garlic and chillies. Add the lime juice, the oil and the bouillon cube.

Then blend until smooth.
Step 2: Add the spice mixture on the chicken and coat well. Then cover and let it marinate in your refrigerator for two hours or more, the longer the better.
Step 3: Preheat your grill or barbecue, lightly brush it with oil and now grill the chicken for 30 minutes or until it is tender. You need to turn it often in order to cook all the sides.
